Batter Preparation

Sieve flour through strainer

Mix flour and salt. Gradually add in water while mixing until you get a liquid batter. Cover with a cloth and leave to rest for 30-40 minutes.

Put an oiled pan on high heat until very hot. For each Qursan, scoop 1/4 cup of the batter and pour it over the pan. When it is cooked on one side, flip it to brown on both sides. Repeat with the rest of the dough.

Keep Qursan pancakes on the side for a later use.

In a cooking pan fry onions with ghee until they turn light golden then add meat cubes and Loomis and stir well until meat color starts changing.

Add tomato paste, mix well and keep on heat for 10 minutes then add chopped tomatoes, black pepper, cardamom, cinnamon, dry coriander and water to cover all the ingredients. Cover the pan and leave on low heat for 40-50 minutes or until the meat is well cooked.

Meanwhile, cut and boil the green beans until they are half done. Drain and set aside.

When meat is well done, add all vegetables to the cooking pan, make sure there is enough sauce in the pan to cover all vegetables, if not, add water. Cover and leave on low heat for 20-25 minutes.

To serve: Cut Qursan breads into medium size pieces and spread on the serving plate. Pour the meat and vegetables on top of the Qursan breads; cover the plate for a few minutes before serving.
