Ingredients

  • 2 cupsall-purpose flour
  • 1 cupwhite sugar
  • 2 teaspoonsbaking powder
  • 2 eggs
  • 2 teaspoonsvanilla
  • 1 teaspoonvinegar
  • 1/2 cupoil
  • 1/2 cuporange juice
  • 1/2 cupmilk
  • 2 tablespoonsorange rind
  • 1 tablespoonlemon rind
  • 1 pinch of salt

    Mix first 3 dry ingredients: Flour, sugar and baking powder. Set aside.

  2. 2

    In another bowl, beat eggs with an electric mixer for 1 minute.

  3. 3

    Add vanilla and vinegar to the eggs and beat again (I use vanilla and vinegar to kill the egg smell in the cake).

  4. 4

    Then add the oil, milk, orange juice, orange and lemon rind and mix with an electric mixer for 2 minutes.

  5. 5

    Now add the dry ingredients in addition to the salt to the liquid ingredients and mix with an electric mixer for another 2 minutes.

    Preheat oven.

    Pour the batter in a pan, the size of the pan depends on how thick you like your cake to be.

  8. 8

    Insert cake in oven and bake for around 20 minutes or until a toothpick inserted in the center of the cake comes out dry.

    Serve and enjoy :)
