Ingredients

8 servings
  1. 2 cupluxury mixed dried fruit
  2. 1/3 cupscant , demerara (raw) sugar
  3. 1extra large egg
  4. 1 1/2 cupselfraising flour
  5. 2/3 cupboiling water

Cooking Instructions

    Put fruit into bowl,add 1/4pint ( 2/3 cup ) boiling water soak fruit for30 minutes.

    Preheat oven to 180C/350F/gas4 . Grease and line the base and long sides of a loaf 1lb loaf tin (pan)

    Beat the main quantity of sugar and the egg into the water/fruit .Sift the flour in stir unti well combined.Turn into prepared tin,level the surface and sprinkle the rest of the sugat over top.

    Bake for about 50 minutes,until risen and firm to touch.When the bread is cooked a skewer inserted into the thickest part should come out without any mixture on it. Leave in tin.for ten minutes,then turn onto wire rack.

    Eaten nice as it is or with butter. Tightly wrapped in foil this will keep for up to 5 days.
