Fried potatoes or aloo tuk and fried brinjals or tariyal vangan are famous Sindhi side dish served best with dal chawal in hot summer days or with sai bhaji and chawal.

Fried potatoes or aloo tuk and fried brinjals or tariyal vangan are famous Sindhi side dish served best with dal chawal in hot summer days or with sai bhaji and chawal.
Steps

Peel the potatoes and cut them into roundrels nearly half inch in thickness.

Similarly,cut the brinjal into roundrels half inch thick and make criss cross marks on them.

Put these cut brinjals in water along with 1 tsp of salt.

In a bowl,take salt, turmeric powder, coriander powder and red chilli powder and mix it well.

Take a wok with oil and deep fry the potatoes on medium flame till golden brown on both sides.

Take them out in a plate and sprinkle the masala powder on them.

Similarly,deep fry the brinjals on medium flame till golden brown.

Sprinkle the masala powder on brinjals too and serve them hot.
