I first had a taste of mackeral spread when I ate at Loch Fynn restaurant, I enjoyed it but found it a bit greaney, I read around cooking books to see what I could make and experimented with using mayonnaise, cream cheeses, different mustards but found them not to my liking, I picked up the wrong cream in the supermarket and tried it with it, I found I enjoyed it, its a simple dish and quick to make and for quick lunches at work is ideal.

Ingredients

  1. 3smoked mackerel fillets
  2. 150 mlsour cream
  3. 1lemon using all Zest and juice of half lemon
  4. 2spring onions
  5. Fresh parsley, small handfull

Steps

  1. 1

    Remove the skin from the fish and break up with a fork into a bowl

  2. 2

    Into the same bowl add the sour cream and Zest of the half lemon with the Zest and mix

  3. 3

    Season with salt and you are now ready to serve onto a slice toasted sourdough bread, but that's just my preference.
