Egg Roll

Steps

Take a medium-sized bowl pour flour, pinch of salt, 1&1/2 tsp oil and water, and knead into a dough. After 25-30 min make 6 balls out of the dough. Then roll the balls into circles of 5 inch diameter.

Simultaneously heat the tawa in low to medium flame. Put one circle and cook it properly from both sides until brown spots appears. Put 1 tsp oil cook it from one side. Same way cook the rest of the paratha.

Take a small bowl and whisk one egg with pinch of salt. Pour half of the egg slurry on the tawa and quickly cover it with a paratha (oil side over the egg). After 45 secs pour 1 tsp oil and spread the oil over the paratha and flip it.

Transfer the paratha in a plate and garnish with tomato sauce, chopped cucumber, onion, green chilies, coriander and crushed pepper. Roll the paratha nicely.

Hold the EGG ROLL in hand and bite into the delicious, juicy and crunchy Kolkata Street food.
