Soak quinoa in water for 10 mins.

Now boil 500 ml water (water quantity should be double of the quantity of quinoa), transfer quinoa in it and boil for 10-15 min, the quantity of quinoa will get more than double.

In another kadhai heat oil and add chopped onion, saute it till it becomes golden then add chopped tomato and capsicum.

Now add chopped carrot and all spices, mix them and cook on low flame.

Drain out excess water of quinoa and transfer it to the cooked vegetables.

Mix all ingredients. Delicious and healthy vegetable quinoa is ready to serve.
