1. Wash basmathi rice thoroughly and soak in water for about 20 minutes. Exactly 20 minutes not more than that. Drain the water and keep aside.
2. Heat 2 tbsp of ghee in pan add cinnamon, cumin, cardamon, clove and bay leaves. Once it start to fry add thinly sliced onion. Saute nicely and add salt. - 2
3. Add this to rice. Add 1.5 cups of water cook in cooker until done. I use rice cooker.. You can do it in pressure cooker as well. Mind the whistle count. If you are not using any cooker just add rice to 2 cups of boiling water and cook untill all the water evaporates.
4. Garnish with roasted cashews and fried onion. - 3
5. Serve hot with any spicy or creamy curry.
