Cheesy Grilled Portobella (Keto friendly)

Not sure what else to call these other than little "pizzas" lol, but they are low carb and delicious so I'm happy! We served ours with grilled boneless skinless chicken breasts.

Not sure what else to call these other than little "pizzas" lol, but they are low carb and delicious so I'm happy! We served ours with grilled boneless skinless chicken breasts.

Prepare your grill for direct grilling. Gently clean mushrooms and brush 1/2 tbs oil on both sides of both mushrooms. The mushrooms will absorb the oil, but that's okay. Sprinkle both sides of each mushroom with desired amounts of salt and pepper.

Place mushrooms on grill, scooped side down, close lid and cook for 5 minutes. Gently flip over. Fill each mushroom with half the shredded cheese and sprinkle half the diced tomatoes on top.

Close grill lid. Cook 4-5 minutes more or until mushrooms are tender and cheese is melted. Serve as a main dish or side! Enjoy!
