Ingredients

  • 1/4cucumber, peeled/sliced thin
  • 1roasted red pepper, chopped
  • 3 slicesred/white sweet onion
  • 1beef steak tomato, sliced thin
  • 2 slicesmulti grain bread
  • 3 tablespoonshummus
  • 1 tablespoonmayonnaise

Steps

  1. 1

    Spread hummus liberally on 1 slice of the bread.

  2. 2

    Layer cucumbers, diced roasted red pepper, onions and tomato slices on the multi grain bread.

  3. 3

    Spread mayonnaise on the remaining slice of bread and finish the sandwich. slice in half and serve with chips of choice.
