Soak rice for 2.5-3 hour.

Boil with 1.5-2 lit water (use large size pan). Add food colour (as much dark colour you required) few drops of oil and few drops of lemon juice/vineger. Boil till almost rice cooked. Drain water and keep rice aside.

Heat oil in pan add clove and cardamom and stirr till a fine aroma evolved.

Place boiled rice in large pot in layer, alternate with layer of sugar. Pour heated oil at top and keep the pot direct on medium to high flame for 5 minutes, till the entire sugar melt down into watery liquid.

Add all the additives (nuts, sweet ball, asharfi) on top or add during serving.

Now put the pot over pre-heated steamer (tawa). Tightly close the pot lid. And slow down the flame to make a steam inside. Wait for 15-20 minutes. Till all the moisture dries up and rice get fully cooked and softens.

Now the zarda is ready to eat
