Ingredients

8-10 servings
  • Step one
  • 4 tablespoonsoil
  • 1/2each chopped onion
  • 6 clovesgarlic, minced
  • 2 stalkschopped celery
  • 1each chopped carrots
  • Step two
  • 1/2dry pint Cherry tomatoes-diced or 1 -14. 5 ounce can of diced
  • 1/2habanero pepper finely chopped (optional... we like it spicy:)
  • 1/4red bell pepper-small dice
  • 1/4yellow bell pepper small dice
  • 4 ouncesdiced cooked chicken
  • 2 tablespoontomato paste
  • 1each potato -small diced
  • 2 quartschicken broth (stock)
  • 2 tablespoonsparsley
  • 1 1/2 teaspoonsalt
  • 1/2 teaspoonblack pepper
  • Pinchthyme
  • 1/4 teaspoonoregano
  • 1/2 teaspoondry basil
  • Step three
  • 1 cupelbow macaroni
  • 1 can(14 ouces +/-) white kidney beans
  • 1 cupbroccoli florets
  • 1/2 cupsmall cauliflower florets
  • 3-4asparagus stalks cut thinly on a bias
  • 1scallion cut on a bias –added as 2 minutes before the soup is done

Steps

  1. 1

    In a large pot over medium heat. Add onion, celery, garlic and carrots; sauté for 4 minutes.

  2. 2

    Add tomatoes, peppers, diced chicken, tomato paste, potato, chicken broth, parsley, salt, pepper, thyme, oregano and basil to the pot. Bring to a boil, cover, and reduce heat. Simmer for approximately 15 minutes until vegetables are barely tender.

  3. 3

    Add the macaroni,white kidney beans broccoli, cauliflower and asparagus and simmer for 15 minutes more. Adjust as needed seasoning.

  4. 4

    Add the scallions 2 minutes before the soup is done.
