Peel the sweet potatoes and cut into 1 cm cubes

Melt the butter with the oil in a large frying pan and add the sweet potato cubes, then fry stirring frequently for about 10 minutes until they are just soft

Stir in the garlic, ginger and allspice

Cook stirring constantly the 5 to 7 minutes

Stir in the ginger syrup, salt and a generous pinch of cayenne pepper and the fresh thyme

Stir for 2 minutes more then serve scattered with thyme sprigs
