Ingredients

  • 900 gsweet potatoes
  • 50 gbutter
  • 3 tablespoonsoil
  • 2garlic cloves crushed
  • 2 piecesroute ginger finely chopped
  • 2 teaspoonsground allspice
  • 2 tablespoonssyrup from the ginger jar
  • to tastesalt and cayenne pepper
  • 2 tablespoonschopped fresh thyme and some sprigs to garnish

  1. 1

    Peel the sweet potatoes and cut into 1 cm cubes

  2. 2

    Melt the butter with the oil in a large frying pan and add the sweet potato cubes, then fry stirring frequently for about 10 minutes until they are just soft

  3. 3

    Stir in the garlic, ginger and allspice

  4. 4

    Cook stirring constantly the 5 to 7 minutes

  5. 5

    Stir in the ginger syrup, salt and a generous pinch of cayenne pepper and the fresh thyme

  6. 6

    Stir for 2 minutes more then serve scattered with thyme sprigs
