Jollof rice, coleslaw & chicken

Wash, spice and boil your chicken

Parboil your rice. Blend your pepper, tomatoes, onion, garlic and ginger. Cook to reduce the water.

In another pot, put your groundnut oil, when its hot, fry your onion, then ur tin tomatoes. Next add your blended tomatoes and fry until the sour taste clears

Spice your fried tomatoes, then scoop out some of the fried tomatoes, add ur chicken stock in the pot, allow to boil.

Put your rice, stir and allow to Cook. When its almost done, add the remaining tomatoes, onions.

Cover the rice and allow it cook a little while and voila. Your jollof rice is ready. Serve with your fried chicken and coleslaw.
