Wash and cut the dill and scallions into pieces. Cut the catfish into bite-sized pieces and marinate with a little fish sauce, a bit of fermented shrimp paste, sugar, and vegetable bouillon powder. Mix well and let the fish absorb the flavors for 15 minutes. Next, add the turmeric powder, then place the fish on a grill rack, brush lightly with oil, and grill until cooked. Once the fish is done, sprinkle roasted peanuts, dill, and scallions on top.

Serve hot with a dipping sauce of fish sauce or fermented shrimp paste, along with salad greens and rice vermicelli noodles. It's very flavorful.
