If you want a quick, hot, and delicious plate of xoi xeo for breakfast before work, let’s make it together!

Soak the mung beans and glutinous rice for about 4-6 hours to soften.

Drain the mung beans and rice. Place each in a large microwave-safe bowl with a little water. Microwave the mung beans for 4 minutes, take them out and stir, then microwave for another 4 minutes. When the mung beans are soft, blend them until smooth. Do the same for the glutinous rice. When both are soft, mix them together with 3 tablespoons coconut milk and a little salt. Microwave the mixture for another 4 minutes.

Scoop the xoi into a bowl. Now you have a delicious, chewy bowl of xoi xeo for breakfast, and it’s quick to make!
