Dhania in Matoke not only adds great colour contrast, but is very tasty.
Steps

Fry the onions, then salt and add the bananas. Cook over low heat till done.

Fry more onions and add ginger n garlic. Salt n pepper to taste. Add your chopped tomatoes and then mix in the chicken. Cover and let it slow simmer as the spices incorporate into the chicken.

Add the broth and let cook. Once done, you'll separate the soup from the chicken.

Over very low heat, Mash the cooked bananas. Add some dhania properly incorporate.

Stir fry the rest of the veggies..add the sweetcorn. Salt and pepper.

Serve and enjoy.
