I've been kinda into Hawaiian food lately. This is a simple coconut pudding, thickened with corn starch, common at luaus.

I've been kinda into Hawaiian food lately. This is a simple coconut pudding, thickened with corn starch, common at luaus.

Combine sugar and cornstarch in a stainless steel saucepan. I don't recommend a nonstick saucepan unless you happen to have a rubber whisk because you'll scratch it up with all of this stirring.

Whisk in the remaining ingredients over low heat.

Keep whisking pretty regularly until the mixture begins to thicken. Once it starts to thicken, you'll need to whisk more often to keep it from burning.

When the mixture is nice and thick (closest comparison I can think of is mayonnaise) pour it into a brownie tray or a cake pan.

Let it cool for 10 minutes or so, then into the fridge to chill until serving.
