I've been kinda into Hawaiian food lately. This is a simple coconut pudding, thickened with corn starch, common at luaus.
Cooking Instructions

Combine sugar and cornstarch in a stainless steel saucepan. I don't recommend a nonstick saucepan unless you happen to have a rubber whisk because you'll scratch it up with all of this stirring.

Whisk in the remaining ingredients over low heat.

Keep whisking pretty regularly until the mixture begins to thicken. Once it starts to thicken, you'll need to whisk more often to keep it from burning.

When the mixture is nice and thick (closest comparison I can think of is mayonnaise) pour it into a brownie tray or a cake pan.

Let it cool for 10 minutes or so, then into the fridge to chill until serving.

This is the extremely popular hau pia dessert that my Aunty showed me how to make when I lived in Hawaii. Aunty used 1l coconut milk but I've adjusted it a more manageable amount for this recipe.It's very important to mix after adding the cornstarch mixture. If you cut corners and pour it into the tin too soon, it won't set properly and you'll end up with a powdery mixture. Heat the mixture well (on a low heat, so as not to burn) to separate the coconut milk from any oil content. Heat until you have a lovely glossy finish!! #CookClickPaani Poori is a famous Mumbai street style food! Mumbai and many other Indian cities are quite famous for their street side food culture. The name paani poori comes from the two main ingredients used in this dish i.e. chatpata paani (spicy water) and poori (crispy fried Indian flatbread).This dish resembles Delhi’s Gol Gappe and Kolkata’s puchkaas! The small crispy pooris can either be made at home or store bought. These are filled with a stuffing of boiled potatoes and cooked black chanaa and green moong or then in Mumbai style with cooked White Peas and are then dipped in the spicy and then sweet paani. The poori once filled is to be immediately stuffed into the mouth before all the water from it makes it soggy!Many a times, the paani poori masala available in the market is used in making the chatpata water. But it's difficult to get a hold of very fresh meat...so I used tuna instead.I studied how restaurant yukhoe tasted while I was eating it, and flavored this version to my taste.Nowadays you can't get yukhoe at restaurants, so this is one of my family's favorite dishes.You can use offcuts of tuna or anything. You can chop it up to the consistency you want too.If you use frozen tuna it may get watery, so it may be better to mix in the sauce just before serving!Even when you have to wait a while until you can serve it, be sure to mix in the sauce just before serving.
