In a large bowl, mix the Maseca corn flour with warm water until you have a smooth, workable dough. Once ready, take portions of the dough and roll them into balls (any size you like), then flatten them using a tortilla press.

After flattening all the dough balls, heat them on a griddle or skillet (do not cook them all the way like tortillas). Once done, pinch the edges of each disk upward to form a rim, then fry them in a skillet with plenty of oil until golden.

Once the sopes (the fried dough bases) are ready, cook the refried beans and ground beef.

For this recipe, the ground beef is cooked with tomato, onion, chorizo sausage, and seasonings, similar to a picadillo.

To assemble the sope, first spread refried beans on the base, then sprinkle shredded cheese, and finally add the meat mixture on top.

You can serve with sour cream and salsa, and as a side, a salad of carrots and lettuce is delicious.
