Herby Hummus

What can you do with one tin of chick peas, a lemon, a drizzle of olive oil, a dash of tahini, a few herbs and one clove of garlic within 10 minutes? 3 herby flavoured hummus of course. If time is sparse and you have unexpected guests coming round, this is a real winner. Much quicker and cheaper than popping to the shops.

Grind the peeled garlic and salt in a pestle and mortar.

Blend together all the ingredients in a food processor or blender until smooth. Take out a small dish full and add a few chickpeas to decorate.

Then add the chopped coriander. Mix well. Once combined take out another small dish full and garnish with some coriander leaves.

Now add the chopped mint and blend until smooth. Add the remaining hummus to another small dish and garnish with some mint leaves.

Serve with some warm toasted flatbreads or pitta for dipping.
