Soak the chickpeas overnight. The next day, cook the chickpeas, skimming off any white foam that forms. Simmer over low heat until tender.

Place all the ingredients (chickpeas, garlic, lemon juice, tahini, salt, olive oil, and cooking water) in a blender. Blend well until the mixture is smooth and creamy.

Serve the hummus and garnish with mint leaves and a sprinkle of red pepper or sumac.
