Ingredients

  1. 3 cupscooked chickpeas (about 500 grams)
  2. 1/2 cupchickpea cooking water (about 120 ml)
  3. 1/4 cuptahini (about 60 ml)
  4. Juice of half a lemon
  5. 1 tablespoonsalt
  6. Mint leaves for garnish
  7. 2 tablespoonsolive oil
  8. 3garlic cloves

Steps

  1. 1

    Soak the chickpeas overnight. The next day, cook the chickpeas, skimming off any white foam that forms. Simmer over low heat until tender.

    Place all the ingredients (chickpeas, garlic, lemon juice, tahini, salt, olive oil, and cooking water) in a blender. Blend well until the mixture is smooth and creamy.

    Serve the hummus and garnish with mint leaves and a sprinkle of red pepper or sumac.
