Orange and Almond Cake (Gluten-Free and Dairy-Free)

This cake is made with ground almonds instead of flour. It contains no milk or butter, so it's both gluten-free and dairy-free. That means people with intolerances can enjoy it, and everyone else will love it too because it's delicious. I made this particular cake for my children's school. My oldest daughter is finishing sixth grade, and throughout the year, families have been preparing snacks to sell on Fridays after school to raise money for the end-of-year trip. It's a school where families are very involved, and as a thank you to everyone, the snacks will be free this last Friday. I hope you enjoy it!

Steps
- 1
Line the bottom and sides of your cake pan with parchment paper.
- 2
Wash the orange well. Place the whole, unpeeled orange in a small pot, cover with water, and simmer for 30-40 minutes until soft. Set aside and let cool.
- 3
Preheat the oven to 350°F (180°C), using both upper and lower heat if possible.
- 4
Cut the orange (with peel) into pieces. Place in a blender and blend until smooth. Set aside the orange purée.
- 5
In a bowl, add the 4 eggs, pinch of salt, and sugar. Beat with an electric mixer until the mixture doubles in volume.
- 6
While continuing to beat, slowly add the oil. Then add the orange purée and mix well.
- 7
Add the ground almonds and baking powder. Mix until fully combined.
- 8
Pour the batter into the prepared pan and bake for 40-45 minutes. Check doneness by inserting a toothpick into the center; if it comes out clean, the cake is done. If not, bake for 5 more minutes and check again.
- 9
Remove from the oven and let cool in the pan for 10 minutes before unmolding. Cool completely on a wire rack. Dust with powdered sugar before serving.
