It is the legendary among all kebabs made usually for ageing Nawabs who ultimately can't chew the meats they love. So these were introduced to their meals which needs not to chew and in turns melts in mouth on it's own.

Ingredients

1 hour
Yields: 15 servings
  • 1.5 CupsBoiled Rajma
  • 3 tbspRoasted Gram Flour
  • 2 tbspHung Curd
  • 1 tbspcashewnut paste
  • 2green chillies
  • to tasteSalt
  • as neededKhus Roots
  • 1/2 inchCinnamom stick
  • 1 tspFennel seeds
  • 1-2Mace (Javitri)
  • 1/4 tspCarom seeds (ajwain)
  • 1Nutmeg
  • 1 teaspoonCoriander seeds
  • 7-10Whole Black Peppercorn
  • 1-2Cloves
  • 1Black cardamom
  • 2Green Cardamom
  • 10Rose petals
  • 1star anise
  • 1 tspCumin seed
  • 2Bay leaves
  • 2-3Whole red chillies

Steps

1 hour
  1. 1

    Broil all the spices or Dry roast all the spices carefully on a medium flame. Cool down and grind to a powder. This is called Galauti Kebab.

  2. 2

    In a mixing bowl take the paste of rajma or mash them.

  3. 3

    Add roasted gram flour to it.

  4. 4

    Add chopped green chillies, cashew paste, hung curd and chopped cilantro leaves.

  5. 5

    Add galauti masala and salt to it and mix it well.

  6. 6

    Grease your palm with drop of oil and start wrapping kebab mixture on skewer. Or Make Round shape kebabs.(Your choice or if not having skewers.)

  7. 7

    Heat a skillet with 2 -3 tbsp of oil and place skewers on it.

  8. 8

    Shallow fry on medium heat till done from all the sides.

  9. 9

    Serve yummy,
