Ingredients

  1. As needed, meat for filling
  2. 2large onions
  3. 1red bell pepper
  4. 1/2 cupred wine (about 120 ml)
  5. 1vegetable bouillon cube
  6. Salt, crushed red pepper
  7. Hard-boiled eggs
  8. Olives
  9. 1 cancorn kernels
  10. Red cabbage
  11. Lettuce
  12. Tomato
  13. As needed, taco shells

    I had leftover grilled flank steak and chuck roast, so I sliced them into thin strips and set them aside.

    Slice the onions and bell pepper into thin strips and cook them in a little oil. Once they soften, add the meat, crushed red pepper, and the bouillon cube dissolved in a bit of water. My goal was to mellow out the grilled flavor. After 10 minutes, add a little salt if needed, since the bouillon and meat are already salty. Cook for 5 more minutes, add the wine, reduce the heat, and let the liquid cook off.
