Ingredients

30 to 45 minutes
8 servings
  1. 1 cupTeff
  2. 3 cupsWater
  3. 1 tbspUnsalted butter
  4. 1/4 tspSea salt
  5. 1/4 tspGround cloves
  6. 1tbsp, plus extra for drizzling Honey
  7. 3/4 cupPitted dates (halved)
  8. 1/4 cupChopped walnuts
  9. as desired Yogurt, milk, or cream (optional)

Steps

30 to 45 minutes
  1. 1

    Heat a heavy saucepan over medium. Add teff and toast, stirring, until grains pop, 3–6 min.

  2. 2

    Add water, butter, and cloves. Stir well. Bring to a gentle boil, cover, and cook 10 min, stirring occasionally.

  3. 3

    Stir in dates, salt, and honey. Cover and cook until teff is tender, 5–10 min. Add more boiling water if too thick.

  4. 4

    Remove from heat and let cool 5 min. Serve in bowls, topped with walnuts and yogurt, milk, or cream. Drizzle with honey.

Tips

Toasting the teff brings out the nuttiness and flavor.
