When my nutritionist encouraged me to try new grains, and mentioned Teff I knew I had to give it a shot. It is high in nutrition and tastes delicious!

Heat a heavy saucepan over medium. Add teff and toast, stirring, until grains pop, 3–6 min.

Add water, butter, and cloves. Stir well. Bring to a gentle boil, cover, and cook 10 min, stirring occasionally.

Stir in dates, salt, and honey. Cover and cook until teff is tender, 5–10 min. Add more boiling water if too thick.

Remove from heat and let cool 5 min. Serve in bowls, topped with walnuts and yogurt, milk, or cream. Drizzle with honey.
Tips
Toasting the teff brings out the nuttiness and flavor.
