  • 1 cupsifted plain flour
  • 3 tspbaking powder
  • 1 cupsugar
  • Pinchsalt
  • 2eggs
  • 1 tspvanilla essence
  • 150 mloil
  • 150 mlmilk

    Sift the dry ingredients (flour, baking powder, sugar, salt) together and mix lightly. In a separate bowl beat the eggs with the vanilla and oil. Add the milk to the egg mixture and make a well in the centre of the dry ingredients. Pour the egg mixture into the well.

    Mix till you have a smooth batter.Grease and line the bottom of a microwaveable dish with baking paper and pour in the batter.

    Place the dish on the edge of the glass plate for even baking and microwave for 7/8 mins depending on your watts of microwave. Insert a toothpick in the center of the cake to check if it's done. Leave to cool for 5mins,turnover onto a flat plate and take the baking paper off. Leave to cool and frost as desired. MAKES 1 LAYER

@Kim Maroney - this is thè most amazing recipe. Thank you. Make it once a week. I halve the ingredients. Have modified it on numerous occasions. Use mashed banana, /grated lemon rind with lemon juice, /ground cloves and mixed spice, with grated orange rind - that's yum!!!
