Butternut flapjack (pampoen koekies)

Steps

Cook cubed butternut in pot with water until soft. Let cool completely.

In a bowl mash butternut. Add cake flour, baking powder, salt and beaten egg. Mix together

In a pan add oil and shallow fry teaspoon full butternut batter until golden. Place butternut flapjacks in kitchen towel to drain of excess oil.

For the syrup add butter, sugar and milk in a pot. Heat slowly until sugar is dissolved

Disolve corn flour and water in a cup
- 6
Slowly add corn flour to milk while whisking

Simmer slowly until corn flour is cooked about 10 minutes

In a casserole or serving dish pack butternut flapjacks and pour syrup over.

Best serve hot
