I love this yummy vegetable stew and I pair it with white rice and a chilled drink...

Wash and cut your vegetables into the desired size and shape

Blend your tomato, scotch bonnet, red bell pepper and onions

Boil your chicken or beef and dice them into bite sizes

Boil the potato and cut it into large cubes

Pour groundnut oil into a pot, add chopped onions when the oil is hot. When the onion starts to turn translucent, add your ginger and garlic and finally add your grinded tomato + pepper + onions and keep stirring

Add your boiled beef or chicken to the pot. Add your seasoning and spices

Then add the potato and vegetables and keep frying. When the stew is fried, add your stock and some more water if necessary, depending on how thick you want your stew to be. Finally, close the pot and allow it to simmer for 5 mins on medium heat.

Tadaaa! Your vegetable stew is ready and it can be served with rice, cous cous, spaghetti or any other dish of your choice.
