Lemony Melting Moment
Cooking Instructions

Preheat oven 180 C and prepare the ingredients.

THE COOKIES : Cream together butter and sugar until light and fluffy. Add vanilla.

Sift together flour, corn flour and custard powder.

Add sifted dry ingredients to the butter in 3 parts. Gently mixing between each until well incorporated into soft dough.

Roll dough to form a ball and flatten it. My little girl cookies are very simple. No pattern. Bake cookies at 180 C for 10-12mins. (Some chill the cookies for 30mins in the fridge before baking). Leave to cool.

THE FILLING : Beat butter until pale and creamy. Add lemon juice and lemon zest and mix again until smooth and creamy.

Slowly add icing sugar in few batches, beating well in between additions. Add yellow colouring if using and mix well. Note : add lemon juice if its too dry. Add more icing sugar if mixture wont hold its shape.

Spoon filling into a piping beg. Pipe/spread the filling onto a cookie and put another one on top. Repeat till you are done with all the cookies. Store in airtight jar/container.

My ‘Melting Moments’ cookies are custard shortbread, that is made with Custard Powder. For a long time, I thought making custard with Custard Powder was unacceptable. However, I discovered that good quality Custard Powder contains only Corn Starch, Salt, Flavour from Milk, natural Yellow Colour from the Achiote tree seeds and nothing artificial. These cookies have a slightly crumbly melt-in-your-mouth texture. If lemon isn’t your thing, any other citrus fruit could conceivably work. The glaze is optional. (Ok, so it took me two tries to get this pie done!!..The first time was yesterday morning around 11:00ish I forgot to separate the eggs yolks from the eggs whites, but that was because I had just finished a phone call that was quite exciting, and I was so happy that I just forgot!! The second time around was much later in the afternoon, it was going well until I decided that I needed to take the pie out of the baking pan and place it onto a cake stand and it fell apart…:( But it doesn’t matter it still tasted so good!!! ) 🙂We have been having gorgeous weather since Monday and I have been out almost everyday running errands and just going out with my brother. It is very sunny and bright outside, so what came to mind with such beautiful days…a delicious dessert, what sort of dessert you say; well Lemon of course. 🙂 It was hot, hot, hot, yesterday to much for this time of year, but I shouldn’t complain it was lovely, so making this refreshing Lemon Pie was a good idea because when the weather is hot you need to cool off somehow and a cold dessert is just a perfect idea. (I added a scoop of Lemon Sorbet on mine instead of whipped cream) 🙂 Lemon Pie, Pudding, Lemonade, Pink Lemonade are my utmost favorite especially if these are homemade. This Lemon pie (tart) is truly so simple to make, you won’t need more than a few ingredients to blend together and your done.. easy, tasty, refreshing !! 🙂 Foodzesty -

I am trying to grow lemon trees at my house. I love lemons, and other citrus. So I am looking ahead to make recipes with lemons. Sweet, tart, and a tiny bit bitter in a good way. Be sure to get all the pith you can off the fruit and maybe use it as fertilizer or compost. Just don't use it in the recipe. It will turn super bitter.
