So this has been a challenge for me 😂. Now that I have been in my new country for a lil over a year I love my Igbo ppl, culture, food … Im even learning the language 😏 … I am able to cook every cultural food here … except this one 🤨 so today I proudly announce after 4 attempts I finally did it ( well was able to get a solid form) 🥳🥳🥳
And my own way ❤️

Ingredients

1-1 1/2 hrs
2 ppl
  • 1 1/2 cupblack eyed peas (cow peas) soaked 20 mins
  • 2red chili peppers
  • 1 tspsalt I used pink
  • 2 tsponion powder
  • 1/2 tspginger powder
  • 1 tspred pepper powder
  • 1 tspblack pepper
  • 1 tsppaprika
  • 2Maggie chicken
  • 1/4 cground crayfish

Steps

1-1 1/2 hrs

    Take cow peas clean in water and then soak for about 20 minutes. The one thing I stopped doing was trying to take off the skins (it’s unnecessary) now take the beans and all ingredients into a blender and add just enough water to cover.

    Since I do not have an oven yet I’m doing this old school and making my own double boiler with 2 pots. I’m using plastic bags to pour my beans into. Squeeze the air out and tie the bag and double bag it. You can use ramekins and put yours in the oven. 350F for 30-45 minutes covered.

    After double bagged I use a large pot and fill 1/3 way up with water. I put my smaller pot inside and put 1/3 up with water and put my bagged beans in and covered with a large enough lid to cover both. Turn heat to medium high and keep this on a low rolling boil for 1- 1 1/2 hour. Be sure to keep checking water levels so the pots are not dried out. We don’t want to melt the bags on the pot 🤭 The finished product should be firm and not runny or too soft

Tips

Unfortunately mine is still a work in progress but I’ve still accomplished so much since it actually stayed together. Please be sure your beans are not visible at all after blending.
