Steps

Heat oil in a pan on low heat

Then add heeng and jeera

Let it splutter, then add green peas, mix well

Cover cook on low heat until becomes soft

Then uncover it and place mashed potatoes, green chillies and chopped ginger in a plate

Now add ginger and green chillies, mix nicely

Saute for few seconds, then add red chilli powder and dhaniya powder

Mix well, then add mashed potatoes and salt

Mix well and roast on low heat for 7 - 8 minutes

Then add amchur powder, chopped coriander and chopped kaju

Mix them well, the stuffing is ready

Take one tomato, flatten a little from top, place it upside down, now cut the top portion of the bottom part, a little and scoop out the pulp

Heat ghee in a tawa on low heat, then stuff the tomato with the ready stuffing and place it on the tawa

Roast the stuffed tomato, by turning it at regular intervals, until becomes light brown and soft

Place the ready tomato in an earthen bowl

Cut it into four parts, do not cut it fully

Place curd, green chutney, chopped ginger and coriander at one place

Now pour curd on top of the slit tomato

Pour green chutney, tamarind chutney, sprinkle red chilli powder, jeera powder and garnish with ginger julliene and chopped coriander

If there is any stuffing mixture left, then you can use it as it is or for making another tomato chaat
