Aside from the slightly tedious preparation, this soup is really easy to make. You can add as much or as little of the ingredients as you like, and put in whatever you want. It's very satisfying! 😏

Wash and julienne the carrot and black fungus. Add half of the enoki mushrooms to a preheated pot and stir-fry over low heat until soft and fragrant (use a little oil). Sprinkle the pork strips with some pepper salt, cooking wine, and starch, then marinate and set aside.

Wash and cut the pig's blood/duck's blood and tofu into sections or thin strips (cut into large pieces if you like a chewy texture, or thin strips if you prefer a smoother texture). Once the vegetables are soft, add them to the pot. Chop the green onion and set aside.

In a frying pan or soup pot, add a box of ready-made broth and a large bowl of water, enough to cover the height of the sautéed vegetables (if you don't have broth, you can use water with bonito powder or chicken powder to make broth). Bring to a boil over medium-high heat, then add the 'sauce' for flavor. Turn to medium heat and add the marinated pork strips. Boil for five minutes.

Mix the tapioca starch with a small bowl of water and pour it into the boiling soup to thicken. Boil for 3 minutes, then add the crushed black pepper and turn off the heat. Beat the eggs and slowly pour them into the soup pot, cover with a lid, and let it sit for 3 minutes. Before serving, add a little sesame oil and sprinkle with chopped green onion. Done! ✅

# You can adjust the amount of black vinegar to your taste by pouring it directly into the bowl before eating. The acidity will be stronger than if you add it to the soup pot. # If you want it spicier, increase the amount of crushed black pepper. The spiciness of hot and sour soup comes from the aroma and heat of the black pepper. If you don't like spicy food, you can substitute with pepper powder! ⚠️ You can also blanch some cellophane noodles, rice noodles, or regular noodles for a simple variation of Suan La Fen or Da Lu Mian!
