Adapted this recipe by OPOS method from Vidhya Venkatesh and made minor changes. I loved it and I use it for different recipes like Schezwan noodles, Fried rice and tripe Schezwan rice. Also can be used for Schezwan paneer fry and as a topping for bread and dosa as you can see in the picture.

Ingredients

  1. 50 gRed chillies
  2. 1/4 cupSoy sauce
  3. 1/4 cupvinegar
  4. 10 clovesGarlic
  5. 1/4 cupSesame oil
  6. to tasteSalt
  7. 1tsp Sugar

Steps

  1. 1

    In a 2 litre pressure cooker, add sesame oil,chopped garlic and red chillies and let it cool on high for 4 whistles

    After it cools down, add vinegar, salt, sugar and soy sauce and mix well. Blend it until a smooth paste and store in an airtight container for upto 2 months.
