Ingredients

1 serving
  • 1courgette
  • 1 tbspolive oil
  • 1 tbspbalsamic vinegar
  • Fresh ground salt and pepper

Steps

  1. 1

    Top and tail the courgette, then cut into two through the middle. Then slice each half into three lengthways.

  2. 2

    Put in a bowl with the vinegar and oil, turn over several times to coat and let them sit for a good 10 mins or so. Season well with salt and pepper then grill for a couple of mins each side.
