This is how I believe salsa should be made: on the bbq. That smokey flavour in the tomatoes and all your veg is stunning.

Grill on your bbq all the veg

Add all the ingredients to your blender/food processor/hand blender and blitz slowly till you manage the texture you like. I prefer my really thick and chunky.

It has to be very acidic and salty as you can use it as marinate, in sandwich, on your tacos (of course)

This will keep for a week in your fridge as it’s a vinegar base type of sauce. You can also blend it even further/thinner and make a mayo with it. ENJOY.
