Ingredients

1 serving
  • 1/2 cupfresh peas
  • a fewcubes of feta or some soft goats cheese
  • a fewdrizzles of extra virgin olive oil
  • some finely chopped dill or mint (or parsley or coriander...) - about 1-2 tsps
  • about 1 tsp zest of (unwaxed) lemon
  • toast of choice
  • sea salt and black pepper
  • optional: a few chilli flakes
  • optional: poached or soft boiled egg

Steps

  1. 1

    Bring a pan of slightly salted water to the boil. Add the peas and cook for 1-2 mins. Drain.

    Mash the peas with the oil, feta and dill/ herb of choice.

    Put the peas on the toast. Top with the lemon zest. Season. Enjoy 😋
