Preheat the oven to 200 degrees

Peel and grate the potatoes into a large mixing bowl. Do the same with the onions and give everything a good mix.

Add to the bowl, seasoning, oil, mint and eggs.

Using a flan dish, pie dish or cake tin, use some butter to grease the pan and then sprinkle over some of the flour to make a lining.

Tip the grated potato and onion mixture into the pan and flatten down with a spoon or spatula to make it look like a cake.

Sprinkle more flour on the top of the potato cake and smear the butter on the top.

Bake in the oven for 45 mins until the top is golden and crispy.
