Bulgaria: Patatnik

This dish reminded me of a really thick rosti but the addition of mint makes it taste very unique. I imagine this would go beautifully with fish and vegetables. This recipe is adapted from 196flavours.com #betheatstheworld

Steps
- 1
Preheat the oven to 200 degrees
- 2
Peel and grate the potatoes into a large mixing bowl. Do the same with the onions and give everything a good mix.
- 3
Add to the bowl, seasoning, oil, mint and eggs.
- 4
Using a flan dish, pie dish or cake tin, use some butter to grease the pan and then sprinkle over some of the flour to make a lining.
- 5
Tip the grated potato and onion mixture into the pan and flatten down with a spoon or spatula to make it look like a cake.
- 6
Sprinkle more flour on the top of the potato cake and smear the butter on the top.
- 7
Bake in the oven for 45 mins until the top is golden and crispy.
