Ingredients

25 minutes
4 servings
  • 4Potatoes medium size
  • 1/2 cupall purpose flour
  • 1 teaspoonRed chilli flakes
  • 1 teaspoonDried mixed Italian herbs
  • 1/2 teaspoonChat masala powder
  • 1/4 teaspoonsalt or to taste
  • 1 cupOil for deep frying
  • ForFor the mayo dip:
  • 1/2 cupEggless mayonnaise
  • 1/2 cupdried Oregano
  • 1 tablespoonfresh thick Curd
  • 1/4 teaspoonBlack pepper powder
  • 2 pinchesSalt (very little)

Steps

25 minutes
  1. 1

    Peel, wash and cut the potatoes into broad wedges.

  2. 2

    Boil 3 glasses of water in a pan, add the potato wedges & 1/2 teaspoon of salt to the hot water.

  3. 3

    Cover and cook until the potatoes are three-fourth done.

  4. 4

    Strain and pat the potatoes dry with kitchen towel.

  5. 5

    Meanwhile, in a bowl, take all purpose flour, red chilli flakes, dried mixed herbs, chaat masala powder and salt and mix it very well.

  6. 6

    Toss the pototo slices in the spicy flour mixture meticulously, to coat them evenly.

  7. 7

    Heat oil in a frying pan, drop the coated potato slices in hot oil and deep fry them on medium flame.

  8. 8

    Once the potato wedges are well browned, crusty edged and crispy, remove them on an absorbent paper.

  9. 9

    Prepare the mayo dip by mixing well all the ingredients listed under dip.

  10. 10

    Do the plating and serve hot with curd dip or mayonnaise
