
the potato flakes were a little too large to coat the chicken the way a traditional flour or corn meal mix would. next time, I may run them through the food processer first to get the finish I'm used to. but there will be a next time, it was very delicious, I did cheat though and added a splash or two of hot sauce to my eggs before coating to give my chicken a kick. but I always go this regardless of the coating being used. defiantly a recipe worth keeping.
