More suggestions below. Experiment! Write down what you tried in case you love it!Note!!! If you use a more fatty meat, such as Italian Sausage, reduce the amount of fat added or your meatloaf will be a greasy mess. A lower fat protein, like fish, is not recommended.

- I probably would have preferred this with the cauliflower all chopped to the point of "riced up", it would have definitely made it feel more like a baked potato substitute. I probably would've preferred it more mixed up than layered, before putting the final cheese, bacon, and chives on top.It's tasty, though.
