Ingredients

30-45 minutes
6 servings
  • 2 1/2 cupscooked & chopped broccoli
  • 2 cupscooked chicken breast (shredded or cubed)
  • 2 cans (10.75 oz.)condensed cream of chicken soup
  • 1 cupmayonnaise (no substitute spreads!)
  • 1 teaspoonlemon juice
  • 1/4 teaspooncurry powder
  • 1 tablespoonmelted butter
  • 1 cupshredded sharp cheddar cheese
  • 1/2 cupfrench fried onions
  • 3 cupscooked white rice

Steps

30-45 minutes
  1. 1

    Preheat oven to 350° F. Grease a 3-quart casserole dish.

  2. 2

    Arrange cooked broccoli in casserole dish. Arrange chicken over broccoli.

  3. 3

    In a separate bowl, combine the soup, mayonnaise, lemon juice, curry powder, and melted butter. Mix together and pour over chicken and broccoli.

  4. 4

    Sprinkle the cheese and french fried onions on top and bake until the casserole is bubbly and the cheese is golden brown, 30 to 45 minutes.

    Serve over the cooked white rice.
