When you're cutting carbs but missing those mashed potatoes, this is a really tasty low-carb replacement.

Preheat oven to 425° F, use a non-stick cooking spray to a casserole dish.

Chop the cauliflower to small bits to the point of being riced, I use a vegetable chopper for convenience. Add chopped cauliflower to a 3-quart pot with the water.

Steam the cauliflower on a stove top for about 5 minutes. Drain and let cool.

Combine mayonnaise, sour cream, and mushrooms; add most of the cheese, bacon, and chives, setting aside enough as desired to add as toppings for better presentation.

Mix cauliflower and mixture in the casserole pan evenly. Sprinkle the set-aside toppings from previous step over the top.

Bake for 15-20 minutes until the cheese is melted.
