Ingredients

  1. 2 cupsshredded sharp cheddar or colby-jack cheese
  2. 1 cuplight mayonnaise (no substitute spreads)
  3. 1 cuplight sour cream
  4. 2 headscauliflower
  5. 1 lbthick cut cooked bacon, crumbled
  6. 6 tbspchives
  7. 8 ozcanned mushrooms
  8. 1 cupwater

Steps

    Preheat oven to 425° F, use a non-stick cooking spray to a casserole dish.

  2. 2

    Chop the cauliflower to small bits to the point of being riced, I use a vegetable chopper for convenience. Add chopped cauliflower to a 3-quart pot with the water.

  3. 3

    Steam the cauliflower on a stove top for about 5 minutes. Drain and let cool.

  4. 4

    Combine mayonnaise, sour cream, and mushrooms; add most of the cheese, bacon, and chives, setting aside enough as desired to add as toppings for better presentation.

  5. 5

    Mix cauliflower and mixture in the casserole pan evenly. Sprinkle the set-aside toppings from previous step over the top.

  6. 6

    Bake for 15-20 minutes until the cheese is melted.
