Ingredients

20 minutes
  1. 2juicy big tomatoes chopped
  2. 2large eggs
  3. 1 tablespoontomato paste
  4. Salt
  5. Chopped onions (on preference)
  6. Cooking oil (corn or sunflower)

Cooking Instructions

    Start by adding the oil to the frying pan and add the chopped tomatoes.

    Add salt and Leave to melt for about 10-15 minutes to create a paste while stirring to make sure it does not stick. Add the spoon of tomato paste and stir (the tomato paste adds an extra flavor). Add the chopped onions if preferred.

    Crack the eggs in the paste and whisk while cooking OR whisk it on a side bowl and then add them, adding salt again

    Mix all together until the mix becomes harder and lighter for about 5 minutes - Do not overcook as it will loose the soft texture.

    Serve with any type of bread but i prefer flat Arabian bread or whatever is similar
