Breakfast time is a bit tricky for mums to prepare for the whole family. We want the healthy food especially for the kids to help them getting enough nutrition but we don't have much time either. This very simple dish can be put in your breakfast menu list, it's healthy and more importantly very easy and quick preparation time.

Ingredients

  1. 5carrots (shreded)
  2. 2spring onions (chopped)
  3. 1/2red onion (chopped)
  4. 3garlic cloves (chopped)
  5. 5eggs
  6. 1 tspsalt
  7. 1/2tap pepper
  8. 2 tbspcooking oil

Cooking Instructions

    Preheat a pan with cooking oil, add chopped red onion and garlic, stir them for a minute.

    Add shredded carrots, mix them well, cover the pan for 3-5 mins until the carrot soften. Meanwhile, crack the eggs in a bowl and mix them well, add chopped spring onion.

    After the carrot soften, add salt and pepper, mix them well. (if you like crispier carrot texture you don't have to cook it too long)

    Pour the egg mixture on top of the carrot, scramble gradually until the egg well done.

  5. 5

    Ready to serve just like that or serve it with rice or for sandwich filling.
