My husband and boys always requested this porridge every week! So that's why I call this Weekend Porridge as I always make this on weekend lol. This porridge is so good by itself and especially on winter days... so comforting! When you have the time, this is also good served with other dishes.

My family of 4 will easily devour this in one sitting (I know it's scarry)... but I'd say this might be good for about 8 servings 😜

Bahan-bahan

8 servings
  1. 3 cupsrice (use rice measuring cup)
  2. 11 cupswater + 6 cups of water
  3. 250 grpork mince (can be substituted to chicken mince)
  4. SEASONINGS:
  5. 1/4 tspwhite pepper powder
  6. 3 tspchicken boullion powder (I use LKK brand)
  7. 1 tbspoyster sauce
  8. 3 tspsalt (or adjust as individual preference)

Cara Membuat

  1. 1

Place 3 cups of rice in a rice cooker bowl. Wash it 2-3 times until water isn't very cloudy anymore. Drain the water. Add 11 cups of water for 3 cups rice (or up to rice cooker level for congee).

  2. 2

Add in mince meat and all the seasonings. Mix evenly using a spatula and breaking up the lumps of mince. NOTE: If you like it a little kick, you can add up to 1 tsp of white pepper powder.

  3. 3

Cook in rice cooker under CONGEE setting until it's cooked.

  4. 4

Depend on your rice cooker, once the operation is done, you can serve it as it is. But my rice cooker doesn't really do a good job making porridge. At this stage the it still looks like rice in a soup. So I need to cook it one more time in Congee setting until the operation ends. Then I'd stir to combine thoroughly.

  5. 5

It'll be to dense at this stage so I'd add another 6 cups of hot water, Mia thoroughly and leave it in "keep warm" setting. Wait for about 10mins and it's ready to serve.

  6. 6

On stovetop, it'll be a more straightforward step. Continue step 5 on low heat after it boils and stir once in a while until the porridge is up to the consistency of your liking. Add more water if needed.

  7. 7

Lastly, add chopped spring onions and ready to serve!

  8. 8

It's delish served as it is or with other dishes, like sweet and sour sardines, hembembos kecap manis (sweet soy sauce spam), baked bean with hambembos (SPC Spam)

I've been living overseas now for the past 20 more years. And while I have all the previleges of trying all sort of new and delicious food the world's got to offer, deep in my heart I longed for food from my childhood. I think anyone who left their home town or home country would know exactly how I feel. I especially miss my paternal grandma's cooking as I was raised eating her food every single day. I wish I could go back in time to when I was a little girl and clever enough to interview her and write down all her recipes so I can always create her cooking whenever I want hehe. So, I'm writing all these recipes with hope that one day when my boys has grown up and if they live apart from me, they'd always be able to create mum's simple home cook meal to warm up their tummy and their heart ❤️. I'm also very busy in my daily schedule, so you'll find my recipes can feed the whole village! Well, not literally lol. but that's what my husband always commented 😇.
