Ingredients

12 muffins
  1. 200 gsoftened butter
  2. 200 gcaster sugar
  3. 4medium eggs
  4. 1 tspvanilla extract
  5. 200 gself raising flour
  6. 1 tspbaking powder
  7. 2 tbspmilk
  8. 200 gglacé cherries

Cooking Instructions

  1. 1

    Preheat oven to 220°c fan.

  2. 2

Put the butter and sugar into a large mixing bowl. Using an electric whisk, mix until pale and fluffy.

  3. 3

Add the eggs to the bowl one at a time, whisking each time. Then add the vanilla extract and whisk again.

  4. 4

Sift the flour and baking powder into the bowl then fold into the mixture using a spoon. The mixture will be thick.

  5. 5

Add the milk and again fold through the mixture. This will loosen the mixture, just the right amount.

  6. 6

Chop the glacé cherries into quarters, add to the mixture and fold them in well.

  7. 7

Line a 12-hole muffin tin with paper muffin cases. Divide the mixture evenly between the cases.

  8. 8

Put into the oven for 5 minutes then immediately turn the temperature down to 180°c for 15 mins. Keep an eye on them as every oven is different. Remove from oven and enjoy.

Found some glace cherries (left over from a batch of Cunard Cherry Bakewell Muffins - not so quick but worth the effort !) at the back of the cupboard and went looking for something easy to do. Halved the recipe and made six muffins - so quick and easy. Discovered that Asda muffin cases are a little on the small side (had a bit of overflow) so will share the mix between 7 or 8 next time. Yes, there will be a next time - these are great ! Thanks :-)
