Another simple dish to serve with white rice. This dish is more like mash potato with pieces of meat and because it's rather salty it's good served with rice. I know, potato is carbo and rice is carbo, too. You can also serve it as is or maybe as companiment of salad, but reduce the saltiness. I learnt this recipe from my mom-in-law, but I think she uses dried ebi (small prawns) with the garlic, which I believe makes the dish more flavourfull and fragrance. But I never used dried ebi as my kids don't like the taste.

  1. 1-1.3 kgpotato
  2. 250 grpork mince (or chicken mince)
  3. 4cloves garlic, minced
  4. 4 tbspOyster sauce
  5. 1 tbspLight soy sauce
  6. 3 cupswater
  7. Sesame oil

    Peel, wash, slice potato into half cm thickness, then don't wash anymore after slicing as we need the starch. Set aside. NOTE: Slicing thicker than half cm takes longer cooking time. Thiner than half cm they'll turn into mash easily.

    Heat up oil in a pan and cook garlic until fragrance (take care not to burn it as garlic burns easily). Then add pork/chicken mince, stir to break up the clump and stir-fry until brown.

    Add in potato slices, oyster sauce, soy sauce and water. Mix evenly and cover pan/wok with lid. Bring to boil and let it stew for about 20mins in med fire.

    Remove lid and let it continue to simmer another 10-20mins. Test the potato and to make sure they're tender but not mushy. Break them up into small pieces (some will be mashed and that's okay).

    Drizzle with sesame oil. Adjust taste and serve with white steamed rice.

I've been living overseas now for the past 20 more years. And while I have all the previleges of trying all sort of new and delicious food the world's got to offer, deep in my heart I longed for food from my childhood. I think anyone who left their home town or home country would know exactly how I feel. I especially miss my paternal grandma's cooking as I was raised eating her food every single day. I wish I could go back in time to when I was a little girl and clever enough to interview her and write down all her recipes so I can always create her cooking whenever I want hehe. So, I'm writing all these recipes with hope that one day when my boys has grown up and if they live apart from me, they'd always be able to create mum's simple home cook meal to warm up their tummy and their heart ❤️. I'm also very busy in my daily schedule, so you'll find my recipes can feed the whole village! Well, not literally lol. but that's what my husband always commented 😇.
