Cabbage Rolls

Cooking Instructions

In a big bottom bowl boil water. Take the cabbage and cut in 45 deg angle the centre and add the cabbage to the water.

Cover and boil for 8-10 mins. Keep checking and with a tong take out the leaves and set aside. Don’t throw away the boiled water. You may need later.

Cut the onions, mushrooms and garlic and set aside

In a pan heat 1 Tbsp olive oil and 2 Tbsp butter and add the onion and garlic. Add mushrooms. Cook until mushroom softens and set aside

Cool to room temperature and add cinnamon powder, cumin powder, red chilli powder, oregano, black pepper powder, chopped parsley. Mix well.

Add Chicken mince, rice and add currents and almonds. Mix well. Refrigerate for 10 mins

Take the inside leaves of the cabbage and cut the edge of the cabbage so that rolling would be easy. Make cylindrical shape of the meat and place in the centre of the cabbage leaf.

Roll and tuck in all extra leaves on the sides and make it meat. Complete the batch.

Take the tomato purée in a bowl and add vegetable stock.

In a bowl add the tomato purée and marinate the cabbage rolls well.

In a big bowl boil water and grease the steamer. Add the not so good looking cabbage leaves and place the cabbage rolls. I fitted 3 in each part of the steamer. Steam for 8-10 mins. Take a knife and see if it comes out clean. If clean the rice and meat is cooked. If not further steaming has to be done. Set aside

Plate and add more chopped parsley and enjoy a hot cabbage roll
