Creamy Chicken Gnocchi Soup

Ingredients

  1. 1 lbrotisserie chicken (dark & white)
  2. 1 packagegnocchi dumplings
  3. 4 cupschicken stock
  4. 1/4 cupolive oil
  5. 1Medium onion
  6. 2celery stalks
  7. 2carrots
  8. 1 cuphalf and half
  9. 4 cupsfresh spinach
  10. 1 tablespoonItalian seasoning
  11. 1 teaspoongarlic powder
  12. 1 teaspoononion powder
  13. Salt & pepper (to taste)

Cooking Instructions

    Saute onions and celery in olive oil until tender. Season with salt and pepper.

    Add in spinach, carrots, and Italian seasoning. Saute for 10 to 15 minutes.

    Add 4 cups chicken broth. Bring to a simmer.

  4. 4

    Add in chicken and gnocchi. Simmer for 20 minutes.

    Cut heat to low and add half n half. Don't boil the cream.

  6. 6

    Serve with crusty bread or Croutons.

    Side note: if the soup is too thin you can add a slurry of cold water and flour to thicken it. If too thick, just add more water.
